The wine
We make wine for ourselves and drink it every day.
In addition to Corsico Rosso we drink wine from years past, aged in 2-litre bottles in our dark cellar. Unfortunately it is not possible to sell this wine, but if you drop by, we will let you taste it !
Don’t ask us for wine that tastes the same every year, and that always tastes the same once opened. Good wine changes flavour as it oxygenates, even within a few minutes, and the next day it tastes different. Also, real wine turns into vinegar after a few weeks!
We make wine for ourselves and for friends. And it was our friends who encouraged us to make the vineyard bigger and to sell our wine.
Our wine is produced in small quantities exclusively from our own grapes from our vineyard in Valenza. This is why our wine, unlike the big producers, changes flavour a little each year, depending on how much sun, how much rain, humidity etc. there has been.
Lastly, we have something against the ‘soon-to-be-made’ mentality: the Barbera stays in the cask for about 12-18 months and is refined in the bottle for several months in our cool cellar. The Vinum Gratiae (Barbera del Monferrato DOC) undergoes a further 12 months of ageing in oak barrels (tonneaux) before finishing in the cellar.
The whites, on the other hand, remain 8-10 months in steel barrels and are then refined several months in the bottle in our cellars.
