Aged 15 months, of which about two in oak casks, it comes from the grapes of our old vineyard in a very sunny position. Produced in only a few bottles, signed and numbered one by one, it is even more intense than ‘Corsico Rosso’.
To be enjoyed at 18-20°C with vigorous dishes such as veal and very mature cheese.

Each vine has plenty of space for greater well-being and better quality of the grapes produced at the expense of quantity. Pre-selection: pre-selection before harvesting, discarded grapes are used for other purposes (jam or vinegar, for own use). Harvesting: grapes harvested BY HAND and then further sorted. Harvesting during the coolest hours of the day, to ensure low fermentation, and with harvesting directly into boxes or vats, to avoid crushing the stalks. IMMEDIATE delivery to the winery. Maturation: steel cask approx. 12 months, 2 months in oak barrels (tonneaux), subsequent refinement in the bottle.
